We’re Andrew and April Eberhart — a husband and wife duo with a wild love for coffee, people, and second chances.

Once upon a time, Andrew was deep in a world that looked nothing like this one. Now? He’s 20 years clean, a master coffee roaster, and the guy behind every brilliant batch we serve. April is the brains behind the operation — systems, strategy, vibes — and the one making sure things are organized. Together, we’ve built Monos as a labor of love (and maybe a little madness).

We don’t just make coffee — we live it. We roast small batches by hand in Central Kentucky, chasing flavor, balance, and that perfect fruity-citrusy-light-roast magic that makes your morning worth waking up for. We believe coffee should taste amazing and make you feel something — like you’re about to have the best day ever. Whether you’re rolling into a Monday or launching a new dream, we’re here to fuel your mornings, elevate your rituals, and help you live a more epic life — one cup at a time.

Our roasting hub in Nicholasville is where it all comes together — ridiculously good coffee, good people, and chill vibes. On Sunday mornings, the shop transforms into a space for worship. It’s relaxed, welcoming, and open to anyone — whether you’re looking to grow in your faith, just curious, or simply searching for real community. We call it The River Kentucky, and you’re always invited. No pressure, no expectations — we’re as real and down to earth as they come. And yes, the coffee’s still on!

Sourcing & Sustainability

While our coffee isn’t officially labeled organic, it’s naturally organic in practice. We buy our beans from a trusted supplier who works directly with small coffee farms that typically don’t use pesticides—often because they can’t afford them, not because of certification. In fact, organic certification itself can be costly, and many farmers simply can’t afford the fees. This is actually common among many coffee farms. Rest assured, what you’re getting from Monos is some of the best, cleanest coffee you can find.

We roast our beans in-house at our Nicholasville roasting hub using a gas-powered roaster. This method gives us precise control over the temperature and timing, allowing us to carefully develop each batch’s unique flavor profile. Roasting in-house means we can monitor every step, ensuring consistency and freshness from bean to cup. Our goal is to bring out those vibrant, bright, and complex notes that make our light, Nordic-style roasts so special.

Sustainability isn’t just a buzzword for us — it’s woven into every part of our process, from farm to cup. We’re committed to supporting farming communities by working through suppliers who prioritize fair trade and ethical practices, ensuring farmers receive fair compensation for their hard work. By choosing smaller farms, we help preserve traditional farming methods that protect biodiversity and encourage natural ecosystems.
